Origin: Isnos, Huila, Colombia
Notes: Plum · Dates · Lemongrass
Process: Washing

From the mountains of Isnos, Huila, comes this coffee, the result of selective hand-picking, where only the ripest cherries of the Colombia, Caturra, and Castillo varieties are selected. After pulping, the fruit undergoes a controlled 35-hour fermentation to enhance its finest nuances. Then, the mucilage is thoroughly washed, and the beans are slowly sun-dried for 15 days on patios.

The result is a bright and complex cup, with notes of juicy plum, sweet dates, and a delicate hint of lemongrass. An elegant and balanced coffee that embodies the coffee-growing mastery of Huila.
